Cellar Door Consulting curates wine lists, manages private cellars, trains hospitality teams, and sources allocation wines — for restaurants, collectors, and hosts across Central London, Greater London, Surrey and Essex.
Most advisors specialise in a single course. Cellar Door Consulting runs the full service — from a restaurant's by-the-glass pour to a private cellar's insurance valuation.
Full list builds, seasonal refreshes, by-the-glass programming, and food pairing — matched to kitchen, cover count, and margin target.
Audits, valuations, storage and insurance guidance, and ongoing management for private cellars and members' clubs.
WSET-aligned service training and guest-facing wine education for hospitality teams and private household staff.
Importer relationships, allocation access, and competitive benchmarking — for restaurants, retailers, and collectors alike.
A fractional wine director for independents and small groups across Central London who need list expertise without a full-time salary.
Cellar building, valuation, and management for collectors across London, Surrey, and Essex — often via a trusted introduction.
Bespoke tastings, private dinners, and beverage programming for corporate hospitality and private members' clubs.
From grower Champagne to first-growth Bordeaux, Burgundy grand cru to fortified Madeira — direct, hands-on experience with the wines that matter, and the cellars that hold them.

"Every recommendation is made for the table it's poured at — not the supplier behind it."
Stefan's career began on the floor of the Saxon Boutique Hotel & Villas in Johannesburg, where Michelin-calibre service standards and daily cellar discipline set the tone for everything that followed. A move to London in 2015 led to sommelier and head sommelier roles across some of the city's most respected wine-forward restaurants — including Pollen Street Social, City Social, and the Biltmore Hotel — building and running lists, managing supplier relationships, and training service teams from the ground up.
Since 2023, Stefan has served as Head Sommelier at Core by Clare Smyth, a three-Michelin-starred restaurant, overseeing wine purchasing, list curation, cost and margin control, and the training of a multi-sommelier team. Across his career he has also opened new sites, built wine programmes from scratch, and personally mentored several junior sommeliers through their Court of Master Sommeliers Introductory and Certified examinations.
Cellar Door Consulting was founded to bring that same level of direction — the kind usually reserved for Michelin-starred dining rooms — to independent restaurants, private collectors, and event hosts across London and the South East, without the conflicts of interest that come from supplier-funded advice.
